Chili Recipe

After years of perfecting my chili recipe, I finally conquered it. This recipe can be done on the a stove top, in a slow cooker or my fav, over a wood burning stove. I simplified the ingredients, mostly because I get so frustrated when I find an incredible recipe but all the ingredients are things I have never heard of. This chili is made with ground venison, kidney beans, Pinto beans, diced tomatoes and an assortment of spices to pack it with flavor. You can customize the level of heat and add your favorite toppings.


This chili recipe is easy, flavorful and hearty.

Prep Time: 5 minutes

Cook Time: Stove Top & Wood Stove Low-Medium heat: 2 hours

Slow Cookers: 6 hours low


Ingredients

· 1 pound ground venison or lean ground beef

· 1 large green bell pepper chopped

· 2 Jalapeno peppers chopped

· 1 large white onion chopped

· 2 gloves of garlic minced

· 2 Tablespoons olive oil

· 28 ounces diced Tomatoes

· 15 ounces Tomato Sauce

· 46 ounces Tomato Juice

· 16 ounces Kidney beans

· 16 ounces Pinto beans

· 2 teaspoon Cumin

· 1 teaspoon Oregano

· ¼ cup fresh parsley

· 3 Tablespoons chili powder

· ¼ teaspoon Cayenne pepper

· 1 teaspoon salt

· 1 teaspoon black pepper, ground

· 1 teaspoon sugar

Toppings

· Sour Cream

· Oyster crackers

· Cheddar cheese

· Avocado

· Jalapeno

· Cilantro


Instructions

1. Add olive oil to a fairly large pan over medium-heat. Brown the meat. Transfer meat into a heat safe bowl. Drain the pan of any juice, but leave the meaty paroles those will help pack the onions and pepper with flavor.


2. Sauté the peppers, onion and garlic in the same pan with the meaty paroles for 5-7 minutes, until softened.


3. Remove from heat, add in the spices. (cumin, oregano, parsley, chili powder, cayenne, salt, black pepper, sugar) mix until the pepper and onions are coated in the spices. Try to refrain from eating it, the smell is incredible.


4. In a large pot or crockpot add the meat, sauté mix, beans, dices tomatoes, tomato sauce and tomato juice.


5. Stir and let cook for the time indicated above. If you are cooking on a stove top or wood burning stove remember to stir and taste test occasionally, adjust the level of spice by adding more cayenne pepper.


6. Serve and top with your favorite toppings.
